How to brew coffee

1. Imagine what kind of coffee you want to drink

First, imagine what kind of coffee you want to enjoy.

  • A refreshing, fruity taste → Light roast is recommended
  • A mellow, gentle taste with a good balance of acidity and richness → Medium roast is recommended
  • For those who want to enjoy richness and sweetness → Medium-dark roast
  • For those who want to enjoy the bitterness and aroma of coffee → dark roast
  • For those who want to enjoy the bitterness to the fullest → Extra dark roast

As such, the key is to choose beans that match the image of the finished product you want.

2. Decide on the brewing recipe

Extraction time is 2 to 3 minutes, depending on how the coffee swells.

  • Light roast → Finely ground to bring out the sweetness and fruitiness
  • Medium roast → Medium coarse grind for a mellow taste
  • Medium-dark roast → Medium-coarse grind to extract a large amount of beans to bring out the aroma and sweetness
  • Extra dark roast → It tends to be bitter, so be careful not to extract it for a long time with a medium-coarse grind.

3. Water temperature

A temperature of 90 to 93 degrees is neither too warm nor too hot to prevent under-extraction or over-extraction.

4. How to grind coffee powder

For paper drip coffee, a medium grind of about 1mm in diameter is generally suitable.

  • Fine grinding → Rich, full-bodied flavor
  • Coarse grind → Light and refreshing taste

Feel free to adjust it to your liking.

5. Basic brewing method for paper drip coffee

  1. Fold the edges of the paper and place it in the dripper.
  2. Add the coffee grounds and shake to level
  3. Steaming (with a small amount of hot water) for better extraction
  4. Pour hot water slowly (from a height as close to the powder as possible)
  5. Remove the dripper when the desired amount is reached.
  6. Pour into a cup and it's done!

Even slight changes to the way you pour the hot water or the extraction time will make a difference in the taste, so try adjusting it as you go.

6. Coffee Storage

Generally stored frozen
Whether in bean or powder form, freezing is the best way to maintain freshness.
