BONGEN PREMIUM BLEND

A top barista from BONGEN COFFEE and the top roaster from our own roastery, SHIRAFUSHI, teamed up to create this premium medium-dark roast blend, further elevating the original blend that has been used since the company's founding.

We use high-grade coffee beans, primarily from Brazil and Indonesia. We aim for a powerful yet delicate flavor with a balanced sweetness, richness, and umami, and we've paid meticulous attention to detail, from bean selection to roasting profile adjustments. The development of this blend began with the challenge of making it "even deeper and more refined" than our existing regular blend.

The goal was to maximize the "medium-dark roast flavor" while maintaining the "clean taste" that BONGEN COFFEE values. Through repeated trial and error, we continued to search for the perfect roasting point that maximizes body and aroma while suppressing impurities.

They ultimately arrived at a "subtractive roasting" method using their unique "HIGH CRAFT MODEST ROAST" technique, which involves carefully adjusting the heat intensity and time, as well as the moisture content of the beans, and stopping the roasting when they reach peak sweetness.

The finished blend is a cup that combines a clear, well-defined coffee flavor with deep richness, mellow sweetness, and a fragrant aroma.
