Our first priority was to express the fragrant aroma, clean texture, and fruit-like sweetness of Gesha from Ethiopia's highest elevations as they are.
In the roast, rather than adding showy character, we carefully control temperature and time to draw out the beans' inherent quality and depth.
Like weathered white pine standing quietly on a mountain ridge, we aimed for a flavor that does not assert itself too strongly, yet still conveys a definite presence.
